I’m glad I didn’t I nearly spent 5 times the price of this item on a free-standing gas griddle. I’m glad I didn’t. This grill-to-griddle conversion item works well and gives me more control over surface heat variations than a free-standing carbon steel griddle would provide.I’m well acquainted with cooking on stainless steel surfaces. fantastic ! I wish there was a 4.5 or more. I really do like this product. Prior to this, I was using cast iron griddles over the gas stove. Loved them too, but kinda of a pain because there was no wall to keep in the food if I’m starting to flip things or moving food about.The walls are awesome. The collection tray is awesome. Easy to clean.The only issue: it does not sit totally flat. It did when I first got it. But I guess after uses with high heat, it’s slightly warping…
