Most surfaces need some type of lubricant (cooking spray or oil etc.) so thinks don’t stick.The other thing is after time and some high heat even stainless steal and nonstick surfaces will change color. Also since every grill is slightly tipped toward the drain hole, so being unhappy with eggs etc. sliding in that direction should be expected…
