Not so good for fat baby backs. I bought this hoping it would make it easier to smoke 6 racks of baby back in my WSM. The first time out i put 6 racks of meaty baby backs in there. Here’s is where you run into problems. The space between the racks is too narrow for baby backs. These were the 3 per cryovac pack baby backs from costco. They’re a little too thick for the rack so the meat ends up touching. You don’t get even cooking which leaves your middle ribs undercooked. They might work for less meaty spares or st louis, but…
Disappointed I love the idea of this. The rack fits nicely on my 18â Weber Smokey Mountain smoker. Unfortunately, 2 things became very clear – very fast when I went to use it. There was no way to get 6 set of ribs in this thing (barely got 5 in) and it was a very snug fit. I had 3 St. Louis style racks and 3 baby back racks to cook: After reading other reviews, I tried to find ribs on the smaller side. I trimmed the end of each set of ribs to ease fitting.
